Profiles extremely convex.\nBack: extremely convex, extremely wide, extremely thick.\nShoulder: extremely convex and extremely thick.\nE\nExcellent\nHindquarter: very thick. Profiles very convex.\nBack: very convex, very wide and very thick to the shoulder.\nShoulder: very convex and very thick.\nU\nVery good\nHindquarter: thick. Profiles convex.\nBack: wide and thick to the shoulder.\nShoulder: thick and convex.\nR\nGood\nHindquarter: profiles mainly straight.\nBack: thick, but less wide to the shoulder.\nShoulder: good development, but less thick.\nO\nFair\nHindquarter: profiles tending to slightly concave.\nBack: lacking width and thickness.\nShoulder: tending to narrow. Lacking thickness.\nP\nPoor\nHindquarter: profiles concave to very concave.\nBack: narrow and concave, with bones apparent.\nShoulder: narrow, flat and bones apparent.\nTable 2\nCLASS OF FAT COVER Descriptions of the degrees of fat coverage of a sheep carcase which indicate the fat cover class for that carcase\nClass of fat cover\nDescription\n1. Low\nExternal:\nTraces of, or no, fat visible.\nInternal:\nAbdominal: Traces of, or no, fat visible on kidneys.\nThoracic: Traces of, or no, fat visible between ribs.\n2. Slight\nExternal:\nA slight layer of fat covers part of the carcase, but may be less evident on the limbs.\nInternal:\nAbdominal: Traces of fat, or slight layer of fat envelops part of the kidneys.\nThoracic: Muscle clearly visible between ribs.\n3. Average\nExternal:\nA light layer of fat covering most, or all, of the carcase. Slightly thickened fat zones at the base of the tail.\nInternal:\nAbdominal: Light layer of fat envelops part, or all, of the kidneys.\nThoracic: Muscle still visible between ribs.\n4. High\nExternal:\nA thick layer of fat covering most, or all, of the carcase; but may be thinner on limbs, and thickening on shoulders.\nInternal:\nAbdominal: Kidney is enveloped in fat.\nThoracic: Muscle between ribs may be infiltrated with fat. Fat deposits may be visible on the ribs.\n5. Very high\nExternal:\nVery thick fat cover. Patches of fat sometimes visible.\nInternal:\nAbdominal: Kidneys enveloped in thick layer of fat.\nThoracic: Muscle between ribs infiltrated with fat. Fat deposits visible on ribs.",
