  "text": "Any person applying heat treatment to egg products shall–\n(a) keep accurate records of the results of each test or process carried out by him as specified in Schedule 2 or 3, or in Parts II, III, IV, V or VI of Schedule 4;\n(b) retain such records for a period of not less than two years from the date of the test or process to which the record relates;\n(c) produce such records on request to the appropriate food authority.",
