  "text": "(1) Egg products for which certain storage temperatures are required shall be maintained at those temperatures.\n(2) Those storage temperatures shall be recorded continuously, the cooling rate shall be such that the product reaches the required temperatures as quickly as possible and the containers shall be stored in such a way that air can freely circulate round them.",
