  "text": "Fermented black bean extract (Touchi extract) is a fine light-brown protein-rich powder obtained by water extraction of small soybeans (Glycine max) fermented with Aspergillus oryzae. The extract contains an a-glucosidase inhibitor.\nChemical characteristics of fermented black bean extract\nfat\nNot more than 1 %\nprotein\nNot less than 55 %\nwater\nNot more than 7 %\nash\nNot more than 10 %\ncarbohydrate\nNot less than 20 %\na-glucosidase inhibitory activity\nIC50 min 0,025 mg/ml\nSoy isoflavone\nNot more than 0,3 g/100 g",
