  "text": "The length of the stalk is measured:\nfrom the gills under the cap for open and flat mushrooms,\nfrom the veil for closed and veiled mushrooms.\nSizing is compulsory for mushrooms in ‘Extra’ Class according to following table, mushrooms of Classes I and II having to meet the specified size ranges if the terms ‘small’, ‘medium’ or ‘large’ are indicated:\nClosed, veiled and open mushrooms\nDiameter of cap\nMaximum length of stalk\nSize\nSize limits\nCut mushrooms\nUncut mushrooms\nSmall\n15-45 mm\n1/2 of cap diameter\n2/3 of cap diameter\nMedium\n30-65 mm\nLarge\n50 mm and over\nFlat mushrooms\nDiameter of cap\nMaximum length of stalk\nSize\nSize limits\nCut mushrooms\nUncut mushrooms\nSmall\n20-55 mm\n2/3 of cap diameter\nLarge\n50 mm and over",
