Scales for the classification of carcasses shall apply in accordance with, respectively, points A and B of Annex IV in the beef and veal sector as regards carcasses of bovine animals aged eight months or more and in the pigmeat sector as regards pigs other than those that have been used for breeding.
In the sheepmeat and goatmeat sector, the appropriate authority may apply a ... scale for the classification of sheep carcasses in accordance with the rules laid down in point C of Annex IV.
