The alkaline phosphatase activity in pasteurised cow's milk is expressed as milli units of enzyme activity per litre (mU/l). A unit of alkaline phosphatase activity is the amount of alkaline phosphatase enzyme that catalyses the transformation of 1 micromole of substrate per minute.
