Local operators have acquired a wealth of knowledge regarding the correct handling and transport of the product, management immediately following harvest and cold storage to reduce moisture loss. This knowledge and the related on-site practices allow the qualities of the ‘Patata di Bologna’ PDO to be preserved while respecting its natural physiological processes.
